I replaced my front brake pads the other day, when I did the drivers side I tried just taking out the two bolts that hold the floating caliper to the mount, but the bolts would not come out they just kept spinning, on other GM cars I've had you can take the calipers off like this and change the pads. So I then took the two bolts out that hold the mount on too, that worked fine, I changed the pads. When I tried to tighten everything up, the two caliper bolts would get snug, but not tight. So I tried the passenger side, removed the whole mount in one peice and changed the pads, then for the hell of it tried to tighten the caliper bolts and they did the same thing, they felt snug, but they just spun. Is this normal, because every other car I've had those bolts always tighten up?

If you slide back the rubber seal, there is a flat spot that you can put a wrench on. Just be sure to grease the slider bolts up and replace the seal after you're done.
