Ok, guys I would like to know what the big deal of gasket matching is? When is that the best to do and who does it? Just give me all the details. Thanks

The big deal with gasket-matching is so that you have a smooth transition between all airflow components on your engine. If you keep potential restrictions to a minimum, you can help the efficiency and possibly the power output of your engine. You can have it done by almost any local speed or machine shop. The general consensus seems to be that you only need to do it if you are porting/polishing your cylinder heads for greater airflow. You really don't need to pull components just to gasket-match; there should be other reasons.
