Tools Needed:
Hanger
Phillips Head
Small Phillips Head
Flat Head
8mm Socket
1/4" Drive Ratch and/or Screw Driver with socket adapter

Removal is easy... Ill break it down :)

Vents: there are three small clips, simply rotate the vent to view each clip, and then take a hanger, straighten it (except for the hook) and use the hook to pull up the clips. Be careful on the clips, and when all three on each vent are unsnapped, hook the hanger around the center of the vent and pull.

Side Defrost Vents: Pull out with hanger.

Door Handle Surround: One screw in each!
Gauge Surround: Two screws in the top, and two screws under the top panel of the steering wheel. Tilt the wheel all the way down, and pull up on the panel. It will "pop" off, then you will see two 8mm (I believe) heads sticking out, remove those using an extension or screwdriver with socket adapter. Pull out.

Stereo Surround: Place key in ignition and turn to "on" but do not start, pull the e-brake and put the car into first. Place hand at the bottom of the of the stereo peice and pull. Keys will then be in the way. Put the car back into park and remove the keys. Pull out.

Under Stereo Cubby and Cupholders: Two torx screws (some may be phillips, Ive seen both) inside the cupholders. Remove and pull.

Shifter Surround: Take a screw driver and pry, pulling evenly around the shifter surface, a little here, a little there ... etc all the way around. It will make a god awful noise, but thats ok :)

Foglight Panel: Use a screw driver and pry out, carefully. Tape properly before painting.

Window Switch Panels: Same as foglight panel.

Small Cubby under Foglight Panel: Pull out the "mat" and locate the clips. Using a screwdriver, lift the clips. Once all four are up, pull out.

That is all I know how to do ... for the whole center peice, it appears you need to remove, well, the whole center peice. A few on here have done this, hopefully they will post up.
