I had a mechanic tell me that the main cause of our LIM problems was due to the coolant. Anyone else heard this?

No. Your mechanic is an idiot. Dex-Cool does not eat the LIM gasket. The reason the LIM gasket leaks is due to poor engine design (Source is a GM Engineer that worked on the GA project).

the 2.4's use dexcool and do not have problems

I remember reading a link that was posted here that said that dexcool can "help" mess up the gaskets. I don't remember what the link is but they compared a few different kinds of coolant. Said dexcool was good for aluminum and not so good for gaskets.

It's not the coolant. However, Intake gaskets aren't a problem only for the Grand Am. Many GM products have problems with them.
