i know there's the Metra VT-GMRC-01 which gives you the ability to keep the chimes and stuff...but if i dont need/want that, will i be needing another wiring harness to hook up a aftermarket deck (my case a Alpine CDA-9856)?
the cheapest i could find for the Metra VT-GMRC-01 is $70

That is your only option without hard wiring the deck in, which means cutting off the factory conector

if you dont care about the chimes, then the normal wiring harness will work just fine.

get a harness for a newer chevy metro, you can get them at any autozone, I don't remember the exact part number, but it ends in something like GM3. the harness looks the same, you will have to run an ignition 12v wire to the head unit, but all others will match up. I did this to mine and cost me about $10
