I was wondering if it would be possible to remove the stock grill inserts on my sc/t hood and leave them off? I know I would get a ton of dirt, but was thinking about using a dark type window screen, And does anyone think it would be harmful in rain and snow?

Lots of people do it and put in a grill kit to match their other openings. Won't hurt anything, but I have heard they are a pain to get out.

Yeah. You can take them off.
As fro the extra dirt, arew you talking about the covers for the intakes?

I have mine off. Yes they are a pain to remove. Get a heat gun to remove the adhesive stuff, and remember there are two little torx drive screws holding them in as well.
As for dirt, I haven't cleaned my engine bay (beyond a few wipings here and there of painted parts) since I got the car over 2years ago. Some stuff is a tad bit dirty due to normal circumstances, but it is still surprisingly clean and I have them open all year round.
