iv noticed ever since i have my power steering pump replaced that when ever i turn the wheel at idle, the rpms drop more than they used to.
how much is normal if any? or could this be a IAC problem with the idle.

You are putting a "load" on the motor and the IAC is compensating for that. It is what is suppose to happen. Same with the load from the AC. Maybe the old pump was just not working well enough for you to notice before.

If you're sitting there and spinning your wheel a lot your car will bog down then up and then back to normal if you leave it alone. I was playing with mine to see if it would stall. As long as it doesn't drop below around 450 or something around there then it is fine. Nothing to worry about.
