Yeah I'd go at least 235 with an 8" wide rim. 225/40 with a 7.5" wide has a pretty small side wall already so 8" would probably just look awkward.

Wrong. A 225/40-18 the speedometer will read .9% slower than the stock tires. They are a fairly close size to that needed, but IMO a 225 is too narrow for an 8" wide wheel. You won't have enough sidewall sticking out and be more likely to damage the wheel.
Anything 235 won't really be a good size on an 18" wheel with the sidewalls available. On the other hand, a 245/35-18 will only read .4% slower on the speedometer than stock, and you most certainly will see a grip advantage with that over a 225.
